Background: Considering the high importance of food products due to their direct impact on people's health, this research was conducted with the aim of analyzing the risks affecting the quality of the supply chain of the food industry.
Aim: The purpose of the research is to identify supply chain quality risks and provide a model to analyze food industry supply chain quality risks (case study of 1and1food company).
Methodology: The statistical population of this research includes the senior managers of the One and One food products manufacturing company, Dasht Margab unit of Fars province, and the statistical sample of this research was conducted in a targeted way and includes 7 senior managers of this company. In this research, the risks affecting the quality of the supply chain of the food industry were identified by reviewing the literature and research background and interviewing experts. Then the data related to each of the risks were collected using standard questionnaires. The identified risks were analyzed based on three scenarios. The first scenario. Assessing risks based on risk priority score without considering internal correlation. The second scenario. Assessing risks based on the combined approach of RPN, Extended Delta Rule Algorithm and fuzzy cognitive map (FCM). The third scenario. Assessing risks based on the combined approach of RPN, Particle Swarm Optimization algorithm (PSO) and fuzzy cognitive map (FCM).
Findings: The findings of the research show that a total of 20 risks related to the quality of the supply chain of the food industry were identified at three levels: downstream, internal and upstream. Then, the results of the evaluation of the identified risks based on three defined scenarios were examined.
